Meals of the Month 04.2017

 

It’s the LAST DAY of April Y’all!

Can you believe it?

It feels like it was JUST Christmas!!!!

Since it’s the last of the month I of course have to share my favorite meals and recipes for this past month!

Last month I was eating Low Carb coming off of a Ketogenic Diet. Keto & Low Carb were great at first, but just a bit unrealistic for my lifestyle, food preferences so this month I’ve just been trying to make healthy choices!

b r e a k f a s t

blueberry overnight oats

1/2 cup old fashioned oats +

3/4 cup milk of your choice +

1/4 greek yogurt (plain, blueberry or vanilla) +

blueberries & shredded coconut to taste =

leave in air tight container inside refridgerator overnight & eat the next morning cold or hot!

l u n c h

the kitchen sink salad 

cabbage slaw + broccoli slaw + romaine hearts + red lettuce + tomatoes + green beans (raw) + salami

I call this the kitchen sink salad because I just toss in whatever I have! Seriously, fruits, veggies (raw or cooked) whatever! This is a great way to use up left-overs and not waste food.

Example: You make chicken, rice and corn for dinner and there is just a little corn left, not “really” worth saving, save it! and toss it onto your salad the next day!

d i n n e r 

cilantro lime chicken and rice

chicken breast (sliced) + lime juice + garlic + cilantro + salt & pepper = marinate for a few hours, cook

sweet onion + red onion + zucchini = cook on stove top

rice (cook according to instructions) + butter + lime juice + cilantro + salt & pepper = Yum!

blueberry zinger latte

two blueberry zinger tea bags brewed in 4 ounces of water + 6 to 8 ounces of cold milk + sweetener ( I used agave) +  frozen blueberries (in place of ice)
